We are a family that loves cupcakes! Cupcakes can brighten a day and immediately bring a smile to both my kids faces and my own. I've even considered decorating my girl's rooms in a cupcake theme...wouldn't that be cute?
So when we had the chance to try a new way to make cupcakes, mini ones that can be put on a stick (as a pop) and do not involve any baking at all...I was super duper excited to say the least!
We received the My Little Cupcake Mini Mold and my oldest daughter was fully willing to lend me a hand with this review/feature. In fact, we were both very anxious to see if they really were as easy to make as the company claims.
The mold came with a recipe for their no-bake mini-cupcakes. This recipe involves OREO cookies and a thing of cream cheese. Simple enough, right? You use the food processor for the cookies and then hand mix the cream cheese, to form a dough, which is then refrigerated!
Then...you shape it into balls, put it in the mold, press & squeeze, and out should pop a mini cupcake. We had a little bit of difficulty getting the cupcakes out, but once we had a system, it was pretty simple to get them out without deforming them.
They then were put back in the fridge to get cold and harder...for the dipping part of the process. This was a part we were both looking forward to. I melted both of the chocolates, and tried dipping, only to find that for some reason, our dip wasn't setting up very well. I even put it back in the fridge to try to harden it before putting the top on...and ended up with a bit of a mess.
Of course, my daughter had a blast putting sprinkles on top... and since I wasn't able to find the sticks where I bought the other supplies, we just kept them as mini-cupcakes.
She was very excited with the taste testing part. Unfortunately, because these are really rich (think it was the cream cheese) and because our toppings never hardened...they turned into a big ball of mush...but we sure had fun trying!
Maybe I messed up the process. Maybe we are not skilled enough to make it pretty...like the ones they have on their site. Maybe they aren't as easy to do as they claim. Regardless, we had a great time trying, had a lot of laughs and will perhaps try again in the future.
