I had no idea what to make for dinner tonight. Our supplies were limited and I was stretching to find something quick, easy and that would not require me to run to the grocery store for anything. I mean...it's SPRING BREAK (so I should be on vacation, right?)!
Then I had one of those "light bulb" moments. You know...where the bulb goes "PING" & lights up over your head? I thought...what if I tried to make homemade tortillas? I mean, if I had everything I need...this could be a fun project!
I googled and found a recipe on cooks.com (CLICK HERE) that was not only super easy (almost seemed to easy), but I had everything required to make them. So with a few dumps and stirs, I had the dough made. I layed out a piece of plastic wrap on the counter and placed the dough in the middle, then I put another piece of plastic wrap on top and proceeded to roll out the dough. I will admit that my tortillas didn't turn out looking like "store bought" flour tortillas (I am not real good at making them circles)...but they tasted almost exactly the same & super duper fresh. HOLY YUMMINESS!
My kids gobbled them down and even my husband, who tends to be a pretty strong food critic, loved them!

Yes, I am proud of myself! Not only did I make an awesome dinner that everyone in the family enjoyed...but I learned that I can actually make homemade tortillas if need be and they will be edible & similar to the ones from the store.
Anyway, just wanted to share with you guys, in case you ever wondered if you could make your own homemade tortillas and have them come out almost exactly like the ones from the store. I encourage you to try it. It was fun and I loved how fresh they were. I really had no idea I could until tonight...but I am so glad I did it!
